Buffalo Wing Appetizer

This dish is a tribute to Buffalo, New York, where spicy Buffalo chicken wings originated. The sauce, which includes crunchy celery and a swirl of blue cheese dressing, is the perfect complement to its sourdough bread container.

Yield: 8 servings

Ingredients:
2 pounds chicken wings
3 cups vegetable oil for deep-frying
1/4 cup butter
4 tablespoons Tabasco sauce
1/4 cup blue cheese dressing
3/4 cup chopped celery
Bread from the hollowed-out bowl, cut into chunks
Additional squares of sourdough bread
1-pound to 1 3/4-pound bread bowl

Directions:
1. Wash the chicken wings and pat dry with paper towels. Separate them at the joints, discard the small tips, and set aside.
2. Heat the oil in a large saucepan over medium-high heat. Carefully fry the wings about 10 minutes or until crisp. Remove with a slotted spoon and drain on paper towels. Once cool, remove the meat from the bones, leaving the skin intact. Discard the bones.
3. Melt the butter in a large saucepan over medium heat, and stir in the Tabasco sauce. Reduce the heat to low, add the chicken, and toss to coat. Add the blue cheese dressing, celery, and chunks of sourdough. Mix together gently.
4. Spoon the warm mixture into the bread bowl. Serve over squares of sourdough bread on individual plates.

Bourbon Blue Cheese Dip: $1.93 per serving

Ingredients• ½ pound good quality blue-veined cheese• 1 8-oz block cream cheese• 6 tablespoons Jim Beam® Bourbon• 5 apples
Cooking Instructions: Have cheeses at room temperature. Mash the cheeses and stir in Jim Beam® Bourbon, blending vigorously with a fork until smooth. Cook 5 mins uncovered until mixture is reduced to a glaze. Add parsley, basil and thyme. Cook 1 min. Cool to room temperature. Add remaining oil, vinegar, Jim Beam, sugar, salt and pepper. Mix well. Chill at least 2 hours. Toast walnuts in preheated 350-degree oven 6-8 mins. Allow to cool. Combine walnuts and remaining salad ingredients in large bowl. Toss with dressing. Enough for 12 to share.
Color Commentary What’s unhealthy about this salad? Look at all the goodness of olive oil, feta cheese, leafy greens and brilliant peppers. Oh, and did you see those Omega-3 heroes also known as walnuts? And the high-fiber goodness of the pears? Your mom will call you her “kitchen quarterback” when you show up to the party with this salad.
